Giada De Laurentiis' One-Pan Pork Chop Recipe Is the Mess-Free Meal Parents Need

Have a skillet? Access to pork chops, Golden Delicious apples, and salty pancetta? How about 30 minutes to spare? Then you’re luck, because Food Network star Giada De Laurentiis has a one-pot, mess-free meal that parents can quickly throw together and that kids will want to devour: Pork Chops with Apples and Pancetta.

Originally shared on Season 4 Episode 12 of Giada at Home, De Laurentiis’ pork chops with apples and pancetta is a sweet and savory dish that even novice cooks can master. To start, you brown 3-oz. of diced pancetta while slicing two Golden Delicious apples into about half-inch pieces, followed by sautéing them with a little bit of butter and sugar — using the same pan you used to brown the pancetta. So, yes! Keep that pancetta fan in the pan as you sauté the apples!

“You can just imagine how good this is going to taste,” De Laurentiis says in the episode. “And, of course, it’s very decadent. When you’re craving some real comfort food, you really have to go for it.”

De Laurentiis recommends using center-cut, bone-in pork chops. “The bone actually gives the sauce a lot more flavor, too. So, whenever I can find them bone-in, I get them bone-in,” she says.

When you’re ready to brown the chops (again, in the same pan!), De Laurentiis says you should hear a “nice sizzle” once you drop them onto the skillet. You’ll want to brown them 2 minutes per side.

Next, it’s time to make the sauce. Along with the remaining teaspoon of oil, add cream, brandy, apple juice, thyme, and finely diced onion to the pan (sans pork chops). Then, add the apples and pork chops back into the pan. You’ll use the pancetta bits to garnish the dish.
