The weather’s getting warmer, which means we’re on the hunt for fresh, light recipes that can take the place of the soups and stews we’ve been slurping on all winter. One of our favorite summer meals is poke. These bowls filled with rice, marinated raw tuna, avocado, and sesame seeds are cooling, satisfying, and full of the protein we need to keep us going through the day, so when we saw that Gwyneth Paltrow had a new poke bowl recipe on Goop, we knew we had to take a closer look.
Now, don’t kid yourself about this poke bowl being authentic Hawaiian cooking. It’s definitely the Goop-ified version of poke, but hey, if you can’t make it to your favorite poke place and are craving tuna at home, it could be just the recipe you’ve been waiting for.
Instead of dicing the raw fish and marinating it with dressing, Paltrow uses seasoned tuna fillets to make her dish. They’re seared on each side until cooked medium, then sliced.
Paltrow recommends serving all of the ingredients she calls for — the tuna, white rice, diced avocado, Sriracha vegenaise, ginger-scallion sauce, Japanese cucumber salad (another recipe on her site), Japanese chili crisp, furikake, pickled ginger, and crispy shallots — a la cart, letting everyone build their own bowls.
You could also serve the meal deconstructed. A picture on the Goop website shows the tuna fillets topped with ginger scallion sauce, served with avocado halves on the side that are filled with Japanese chili crisp, along with a portion of white rice sprinkled with black sesame seeds.
