Healthy Hacks: Gourmet Veggie Sandwich

In this week’s Healthy Hacks we show you how to level-up your sanga game with a gourmet version of this classic lunch staple.

Ingredients

  • 4 slices thick wholegrain bread
  • 4 slices shaved Swiss cheese
  • 2 teaspoons basil pesto
  • 1 cup baby spinach, rocket or butter lettuce leaves
  • ¼ cup drained semi-dried tomatoes, chopped
  • ¼ cup drained marinated artichokes, chopped
  • ¼ small red capsicum, thinly sliced
  • 8 basil leaves, roughly torn

Method

  • Spread pesto on each slice of bread
  • Layer the rest of your ingredients
  • Slice and serve
