Buckinis are raw buckwheat groats that have been soaked then dried at a very low heat to preserve their awesome nutrients. You’ll find them in health-food stores and online.
Ingredients
2 tablespoons craisins
1 tablespoon toasted buckinis, (buckwheat)
1 tablespoon chia seeds
1 tablespoon shredded coconut
⅓ cup coconut oil, melted
1 cup raw cacao powder
3 tablespoons pure maple syrup
1 tablespoon vanilla bean paste or extract
Method
Place the craisins, buckinis, chia seeds and shredded coconut in a bowl and mix until well combined. Divide half the mixture among 14 holes of a 2 tablespoon capacity ice-cube tray.
Place the coconut oil, cacao powder, maple syrup and vanilla in a heatproof jug and whisk until well combined and smooth.
Spoon evenly over the craisin mixture in the tray, then sprinkle with the remaining craisin mixture. Chill for 2 hours or until set firm. Serve chilled.
