Vegan Sushi with Couscous

Ingredients for 3 rolls

For the vegan Sushi

  • 120 g Couscous
  • 3 nori sheets
  • 100 g smoked tofu – a longer part 9 thin slices
  • ½ Avocado – only prior to use of the peel and into 6 thin slices
  • 1 small glass (110 g) Sushi ginger

Liquid ingredients and spices

  • 240 ml vegetable broth
  • 1 TSP wasabi paste (or to taste)
  • 1 TBSP vegan Mayonnaise (self-made Vegan Mayonnaise)
  • 1 TSP lime juice
  • 2 TSP rice vinegar
  • Crystal salt
  • black pepper

In addition,

  • Bamboo Mat
  • Cling film
  • Tamari (soy sauce) for Dipping

Preparation

Preparation time approximately 40 minutes cooking/baking time about 15 minutes

The Couscous in a bowl. The vegetable broth bring to a boil, return the Couscous with the hot broth and pour over, cover and leave to swell for 10 minutes. With vinegar, lime juice and a little salt and leave to cool.

In the meantime, the Mayonnaise with the wasabi paste in a bowl and mix with salt and pepper to taste.

Once the Couscous is cooled, a generous piece of cling film and place it on the bamboo Mat. Then a sheet of Nori with the rough side up and 1/3 of the Couscous evenly, on the top edge 1.5 to 2 cm (needed for closing).

Then 3 of the tofu slices side by side on the lower third (not on the lock side!) of the nori sheet, followed by 3 avocado slices and 3 Sushi ginger slices. Then with a Wasabi Mayonnaise drizzle.

With the help of the bamboo Mat and the foil, carefully roll up. The required pressure is created by the Mat is pressed, while rolling with a lot of feeling to the front and slightly downwards.

Just before the blade with a brush a little water on the nori sheet-stroke, so that the roll holds together.

Then to the right and left side of the cling film and with a light pressure on the work surface to roll forward, so that the film insertion end and a uniformly-shaped, round roll. Then in a cool place and the process with the other two roles, repeat.

The rest of the Wasabi Mayonnaise, tamari sauce, and the Sushi-rich ginger to the vegan Sushi and enjoy.

Tip: The Sushi rolls are best with a sharp! Knife cutting. The film only after Cutting, remove.
